Creepy or Quirky Cute?

It seems I've developed an attraction to what my daughter calls "creepy" things. For instance, I picked up this awesome chef clock with moving eyes at a thrift store for a buck. One of his eyes was sunk back in his head, but my handy hubby was able to put it back into the socket and I now have a working clock!

It reminds me of a clock from the 50's and he makes me smile.

Cauliflower Rice - Amazing!

I've made an amazing discovery! If you substitute cauliflower for rice in a fried rice recipe you cut a ton of calories and carbs. Okay, that may not be news to you, but it was to me.

I kept seeing recipes on Pinterest for cauliflower fried rice, but the thought of chopping a whole head of cauliflower into tiny rice-sized pieces kept me from trying it. (Just call me the Lazy Chef!). Then I found it - riced cauliflower in the frozen food section of my favorite grocery store.

Grabbed a bag of it and a bag of frozen peas & carrots. Went home, looked up a recipe and made this.

Cauliflower Fried Rice

It was amazing. This was a meatless version,, but the next day I added grilled chicken to the leftovers - more amazing!

Tonight, I plan to make another batch and add shrimp!

So, what's the big deal? Check out these stats...

Rice - 204-218 calories per cup/43-46 carbs per cup
Cauliflower - 25 calories per cup/5 carbs per cup!

That's a huge difference and now, I can enjoy one of my favorite foods and feel good about eating it.

New Gadget - Quesadilla Maker

Another trip to the thrift store netted me a new quesadilla maker. ($3.00 looked brand new)

Yes, I know that you can make a quesadilla in a frying pan or in the oven, but how plain is that?  Filled my quesadilla with cooked chicken left over from yesterday's *experiment with cooking a whole chicken in the Instant Pot, cheese and a little Pace picante sauce, sandwiched between two flour tortillas.

Took about 3 or 4 minutes to cook. Cut into wedges and dipped them in sour cream with chives. Yummy!

*Yesterday I promised a new attempt with my Instant Pot. I did cook a whole chicken in it, following a recipe I download, however I was not happy with the results. The meat itself was tasty, but the skin was a slimy mess. We had to scrape it all off before we could eat the chicken. Would have taken pictures, but didn't want to gross anyone out. Will give the Instant Pot another go soon. Hopefully, it will go a little bit better.

Just call me Gadget Girl

Okay, I admit it - I'm a kitchen gadget junkie.

In the past week I've become the proud new owner of an Instant Pot Pressure Cooker (thanks to my awesome brother, Rod) and a GT Xpress Redi-Set-Go (yesterday's thrift store find along with several specialty insert pans)

Today I'm playing with the GT Xpress. I'm not usually a breakfast eater, but I really wanted to try out my new toy, so I gathered a few ingredients (bread, butter, egg, cheese, salt & pepper) and made myself an Egg in the Hole in 3 minutes.

The steps are easy:
  1. Turn on the GT Xpress and heat until the green light comes on.
  2. Butter the bread and cut out a circle from the center
  3. Put bread, butter side down, in the Xpress
  4. Quickly crack an egg in the hole and sprinkle the top with salt, pepper and cheese
  5. Close the lid and set timer to 3 minutes
That's it! In no time at all you have a scrumptious egg in the hole. Crispy toasted bread on the bottom, warm yolk in the middle and all that cheesy goodness - Yum-Yum!
